Ingredients

  • Wet Ingredients
  • 3 large Overripe bananas peeled and mashed
  • 2 large Eggs room temperature
  • 1/2 cup Unsalted butter melted or vegetable oil
  • 1/2 cup Whole milk
  • 1 tsp Pure vanilla extract
  • Dry Ingredients
  • 1 1/2 cups All-purpose flour
  • 3/4 cup Granulated sugar or brown sugar
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • Optional Mix-ins
  • 1 cup Dark chocolate chips or chopped nuts

Method

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a standard loaf pan or line it with parchment paper for clean and easy removal.
  2. Mash the Bananas: Place the peeled, overripe bananas into a large mixing bowl. Use a fork or potato masher to mash them until smooth with just a few small lumps left for a nice texture.
  3. Whisk Wet Ingredients: To the mashed bananas, add the eggs, melted butter (or oil), milk, and pure vanilla extract. Whisk the mixture thoroughly until completely combined and smooth.
  4. Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, sugar, baking soda, baking powder, and salt to ensure an even distribution of the leavening agents.
  5. Combine Wet and Dry: Gradually add the dry ingredient blend into the wet banana mixture. Stir gently using a spatula just until the flour disappears. Do not overmix, or the bread will become dense.
  6. Fold in Add-ins: Gently fold in your chocolate chips or chopped nuts at this stage, distributing them evenly through the batter.
  7. Bake to Perfection: Pour the smooth batter into your prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted right into the center comes out clean.
  8. Cool and Slice: Let the freshly baked banana bread cool inside the pan for about 10 minutes. Afterward, transfer the loaf onto a wire rack to cool completely before slicing and serving.
