Slow Cooker Crock Pot Beef Roast

Ingredients
  

  • 3 lbs Beef Chuck Roast
  • 1 packet Dry Onion Soup Mix
  • 1 lb Baby Yellow Potatoes halved
  • 4 large Carrots cut into chunks
  • 1 large Yellow Onion chopped
  • 2 cups Beef Broth
  • 2 tbsp Olive Oil
  • Salt & Black Pepper to taste
  • Slurry: 2 tbsp Cornstarch + 2 tbsp Water optional

Method
 

  1. Sear: Season beef with salt and pepper. Heat olive oil in a skillet and sear meat for 3–4 minutes on each side until brown. Transfer to the crock pot.
  2. Layer: Add the potatoes, carrots, and chopped onions around the beef.
  3. Pour: Whisk dry onion soup mix into the beef broth and pour into the slow cooker.
  4. Cook: Cover and cook on LOW for 7 to 8 hours (or HIGH for 4–5 hours).
  5. Gravy: Remove beef and veggies. Whisk cornstarch slurry into the boiling juices for 5 mins to thicken. Shred beef, pour gravy on top, and serve!
