Ingredients
  

  • 1 large bag approx. 9 oz Fritos Corn Chips (reserve a small handful for topping)
  • 2 cups Chili homemade or canned beef, chicken, or bean chili, warmed
  • 1.5 cups Sharp Cheddar Cheese freshly shredded
  • ½ cup White or Yellow Onion finely diced
  • Optional Toppings:
  • ¼ cup Sour Cream
  • 2 tbsp Pickled Jalapeño slices

Method
 

  1. Step 1: Pre-heat and Prep
  2. Preheat your oven to 350°F (180°C) and grab a standard 9x13-inch baking dish or a large cast-iron skillet.
  3. Step 2: Create the Crunchy Base
  4. Spread a thick, even layer of Fritos corn chips across the bottom of your baking dish. Save a small handful of chips on the side to use as a fresh topping later.
  5. Step 3: Add the Chili Layer
  6. Warm up your chili on the stove until it is steaming hot, then pour it evenly right over the layer of corn chips.
  7. Step 4: Top with Cheese and Bake
  8. Sprinkle the shredded Cheddar cheese and finely diced onions generously over the chili. Place the dish in the preheated oven and bake for 10 to 12 minutes, or until the cheese is completely melted and bubbling at the edges.
  9. Step 5: Garnish and Serve
  10. Remove from the oven and immediately top with your reserved crunchy chips, pickled jalapeño slices, and a few dollops of sour cream. Serve hot and enjoy immediately!
