  • 4 cups whole milk
  • 1/3 cup granulated white sugar
  • 1 pinch salt
  • 1 tsp pure vanilla extract
  • 1 dash ground cinnamon or nutmeg for garnish

Method
 

  1. Step 1: Rinse the Rice
  2. Rinse half a cup of short-grain rice under cold water until the water runs completely clear to remove excess surface starch.
  3. Step 2: Combine and Boil
  4. In a heavy-bottomed saucepan, combine the rinsed rice, four cups of whole milk, one-third cup of sugar, and a pinch of salt. Bring the mixture to a gentle boil over medium heat.
  5. Step 3: Simmer Low and Slow
  6. Once it reaches a boil, immediately reduce the heat to the lowest setting. Let it simmer uncovered for about 40 to 50 minutes.
  7. Step 4: Stir Frequently
  8. Make sure to stir the mixture every five minutes. This prevents a skin from forming on top and keeps the rice from sticking to the bottom.
