Step 1: Rinse the Rice
Rinse half a cup of short-grain rice under cold water until the water runs completely clear to remove excess surface starch.
Step 2: Combine and Boil
In a heavy-bottomed saucepan, combine the rinsed rice, four cups of whole milk, one-third cup of sugar, and a pinch of salt. Bring the mixture to a gentle boil over medium heat.
Step 3: Simmer Low and Slow
Once it reaches a boil, immediately reduce the heat to the lowest setting. Let it simmer uncovered for about 40 to 50 minutes.
Step 4: Stir Frequently
Make sure to stir the mixture every five minutes. This prevents a skin from forming on top and keeps the rice from sticking to the bottom.
Step 5: Add Flavor and Cool
When the rice is tender and the mixture looks like thick porridge, remove it from the heat. Stir in one teaspoon of vanilla extract. Note: The rice pudding dish will continue to thicken as it cools.
Step 6: Garnish and Serve
Allow the pudding to cool slightly. Serve warm or chill in the fridge, and top with a dusting of ground cinnamon, nutmeg, or your favorite nuts before serving.
